Bon Appétit's Genetic Engineering Commitment

In the interest of protecting the health of our farmers, our guests and the environment, Bon Appétit has taken a stance against genetically modified (GM) foods. Although we strive to source as few GM foods as possible, the lack of GM labeling of foods and the pervasive use of GM corn and soy in the U.S. food system makes it impossible to avoid completely. Over 70 percent of all processed foods in the U.S. may contain ingredients from genetically engineered plants (1). Fortunately, we believe that our cafés fall at a much lower percentage because Bon Appétit chefs cook from scratch and don’t rely heavily on manufactured foods. Additionally, joining the Genetic Engineering (GE) Policy Alliance in 2007 further demonstrates Bon Appétit’s support for regulation of genetically engineered foods to safeguard the environment and public health.
